What Famous Local Food to Eat

Top 1: Steam-Pot Feast/ 汽锅宴

In Yunnan, people are familiar with steam-pot chicken, but in Jianshui, you can experience a full Steam-Pot Feast, a traditional local banquet. This unique feast features one large steam-pot chicken, twelve small steam-pot dishes, and six side plates. Instead of bowls, the dishes are served directly in the steam-pots, creating a banquet of pots. All the dishes are cooked in Jianshui’s signature purple clay steam-pots without adding a drop of water, allowing the ingredients to retain their natural flavors and nutrients. Renowned as the “No. 1 Banquet of Jianshui,” the Steam-Pot Feast is a true culinary highlight.

Top 2: Caoya Rice Noodles/ 草芽米线

A signature specialty of Jianshui, caoya is a unique aquatic delicacy found only here, prized for its ivory-like shape, crisp texture, and sweet freshness. Top 3: Lin An BBQ Tofu/ 建水豆腐

Made with the pristine spring water from Jianshui’s Dabanjing Well, this tofu undergoes more than a dozen meticulous steps, including soaking, grinding, and natural fermentation, to develop its distinctive flavor. The most famous way to enjoy it is grilled over charcoal, yielding a golden, crispy outside and a soft, tender inside. Paired with a dipping sauce of chili and garlic oil, it leaves an unforgettable taste.

Top 4: Stewed Pork Belly with Pickled “Goat’s Milk” Greens/ 羊奶扣肉

This traditional dish of the Hani people in Jianshui combines pork belly with yangnai cai (literally “goat’s milk greens”), a unique local pickled vegetable. The greens are tangy and appetizing, while the pork belly, with its alternating layers of fat and lean, becomes tender after long simmering. Once fully cooked, the lotus root is peeled, sliced, and pan-fried until golden and crisp on the outside. Top 6: Jianshui Bird’s Nest Pastry/ 燕窝酥

With a history of over a century, this traditional pastry is named for its nest-like appearance. Made from premium flour, lard, and sugar, it is crafted through multiple meticulous steps. The pastry boasts a crisp, flaky exterior and a soft, delicate filling that is sweet but not cloying, offering rich layers of texture. Top 7: Jianshui Lion Cake/ 狮子糕

This renowned traditional delicacy is said to have originated in the late Qing dynasty, created by the famed “Rong Xiang Zhai” pastry shop in Jianshui. Made from glutinous rice, the cake is sweet, crisp, and fragrant. Its unique shape resembles a lion’s mane, which gives it the bold and auspicious name “Lion Cake.”
