Peking Roast Duck (Beijing kao ya) is considered to be one of the most delicious dishes all over China. It is famous for its brown color, tender meat, mellow taste, and agreeable fatness. It’d be a great loss for visitors to Beijing if they miss to taste it.
History of Peking Roast Duck
Since the Southern Dynasty, duck has been roasted. The dish was called “shao ya zi” by then. In the South Song Dynasty, roasted ducks became a renowned dish among restaurants. The recipe of roasted duck was introduced to Dadu, capital of the Yuan Dynasty, and then roast duck was prepared for the royal family. Peking Roast Duck became famous among the royal dishes in the Ming Dynasty. As society developed, Peking Roast Duck spread to restaurants in various cities.
Famous Restaurants of Peking Roast Duck
There are some restaurants that specialize in Peking Duck in China. They are: Quanjude, Bianyifang, Changan Yihao, and Beijing Xiaowangfu,and so on. Among them, Quanjude and Bianyifang have the longest history of specializing in Peking Roast Duck and they are now household names. Besides, Quanjude has been recognized worldwide and it gained a Chinese Renowned Trademark in 1999.
